    This is a fine professional grade Japanese chef's
    hocho
    (cooking knife)
    with a  wide sharp blade for a multitude of cooking tasks. Whether slicing thin sushi or vegetables or chopping chickens parts, this will be your go to knife.  Made of laminated forged iron

    It has a signature of the artist/maker, Sakai Hidegaku - Watanabe (see picture 6).
    Traditionally used for vegetables, the
    nakiri
    Japanese chef’s knife has a thin blade that is great for slicing through vegetables (or sushi tuna). Its heavy weight and thin blade make it easier to handle and to slice through foods (and fish). Its deeper blade makes it easier to rest the flat side of the blade against the knuckles while slicing, for comfort and safety. This knife will make cooking fun again, since the food prep will be quicker, safer and easier

    . Overall it measures 12 1/2" long (31.5 cm) with a
    blade that is 6 3/4" (17 cm) long by 1 3/4" wide (4.5 cm). Whether you are cutting vegetables paper thin or cutting strips of tuna for sushi you will find this to be a great versatile blade.
